Anyone with a Vitamix can make this vegan dessert. And it’s SOOO good. The mousse isn’t super sweet so I topped it with the HumYum vegan chocolate sauce and raspberries.
Ingredients:
- 1 1/2 cups boiled or soaked cashews
- 1 1/4 cup coconut cream
- 2 Tbsp maple syrup
- 1/4 tsp vanilla extract
- 1/4 cup cocoa powder
- 1Tbsp coconut oil melted
Directions:
1. Drain the cashews
2. Combine cashews, coconut cream, maple syrup, vanilla and cocoa in the Vitamix and blend well
3. Add the melted coconut oil and blend until smooth
4. Pour into jars or ramekins (makes about 4)
5. Refrigerate for an hour
6. Top with HumYum Vegan Chocolate sauce and raspberries
